“Fried” Pickles

If a restaurant offers fried pickles I generally get pretty excited.  However, this was not always the case.  I love pickles, but I always thought frying them was a strange food concept and had no interest in trying them.  Then one day a friend of mine ordered fried pickles and I decided I would try them.  From that day on I was hooked!

Traditionally the fried pickled offered in restaurants are deep fried.  Deep fried items are, by nature, not exactly healthy.  This recipe for fried pickles using a baking method to cook the pickles instead of deep frying them.  The resulting pickles are tasty, crispy and far more healthy then traditional deep fried pickles.  They are the perfect snack or side item for southern inspired dishes.

“Fried” Pickles

1 (24 ounce) jar pickles (sliced kind)

1⁄3 cup all purpose flour

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

2 eggs

1 teaspoon cajun style seasoning

1 teaspoon ground pepper

1 1⁄2 cups panko breadcrumbs

Turn oven to 450 degrees.   In a medium bowl, whisk together eggs and flour.  Add the Worcestershire sauce, garlic powder, cajun seasoning, and ground pepper. Mix well, until combined.  

In a shallow dish or bowl, add the panko bread crumbs.   Submerge each pickle slice into the egg mixture, than cover it in the panko bread crumbs.   Place coated pickle slices on parchment or silicone mat lined baking sheet.
Bake for 7-8 minutes, flip, and bake for an additional 8 minutes or until browned.   Remove from oven and enjoy!
