5 Minute Peanut Butter Cup

I have named this recipe 5 minute peanut butter cup because it literally will only take you 5 minutes (at the most) to create this dessert.  All the ingredients are pre-made so really it is just a matter of putting it all together.  It is the perfect dessert to serve at large gathering, parties, etc.

5 Minute Peanut Butter Cup

1 store bought pound cake loaf

3 tablespoons peanut butter

1 container of frozen dessert topping (I prefer CocoWhip but CoolWhip is fine)

1 packet of chocolate flavored instant pudding mix

In a stand up mixer or large bowl with handheld mixer, add half of the frozen dessert topping and mix on medium speed for about 20 seconds.  Add 2 tablespoons of the pudding mix powder to the dessert topping and mix for another 20 seconds.  Empty the topping mixture into a bowl and set aside.  Using the same mixer, add the rest of the unmixed dessert topping and add about 3 tablespoons of peanut butter.  Mix for about 30 seconds or until well combined.    

Using a knife, carefully cut the pound cake into even slices (about 1/2″ thick).  Using a cookie cutter or top of a drinking glass, cut circle out of the pound cake slices and place into dessert bowls, on dessert plates or inside dessert shot glasses.  Place the left over pound cake pieces into a blender or food processor and pulse a couple times to create pound cake crumble pieces.  Add a scoopful (about a tablespoon) of the peanut butter dessert topping mixture to the top of the pound cake.  Add a good helping of the pound cake crumble on top of the peanut butter mixture and slightly press down to secure.  Top with the chocolate flavored dessert topping.  Store covered in the refrigerator until ready to serve.
