Summer is just around the corner and May marks the beginning of peach season! Peaches are one of my favorite types of fruit. They are sweet, tangy and juicy. Peaches can be used in both sweet and savory dishes. This recipe is for a simple, moist and delicious peach cream bar.
Peaches offer a wide array of health benefits. They contain vitamin C, vitamin E, vitamin K, niacin, folate, iron, choline, potassium, magnesium, phosphorus, manganese, zinc and copper. Peaches are also a great source of antioxidants, fiber and phenolic compounds. They are low in sugar, calories and sodium.
Peaches and Cream Bars
Crust and Topping
1 cup all purpose flour
1/2 cup old fashioned oats
1/3 cup brown sugar
1 teaspoon cinnamon
10 tablespoons butter (cold and cubed)
1/2 cup sugar
1 tablespoon all purpose flour
1/4 teaspoon salt
2 medium peaches (peeled and chopped)
1/2 cup powdered sugar
2 teaspoons milk (or almond milk)
1/2 teaspoon pure vanilla extract
Preheat oven to 350 degrees. Line 8×8 baking pan with aluminum foil and spray with nonstick spray.
In a large mixing bowl, combine the flour, oats, brown sugar, and cinnamon together. Cut in the cold butter using a fork until it becomes coarse, pea-sized crumbs. Remove 3/4 cup of the crumb mixture and put in a small bowl, then set aside.
Evenly press the rest of the crumb mixture into the bottom of the foil lined baking pan. Bake for 15 minutes at 350 degrees.
In a stand up mixer whisk the egg and sugar together until smooth and creamy. Slowly add in the flour and salt. Continue to whisk until combined. Gently fold in the peaches. Pour the peach filling over hot crust. Sprinkle the filling with the oat crumb mixture. Bake for at 350 degrees for about 30 minutes or until golden brown on top. Remove from oven and allow to cool in the pan on a wired cooling rack for about 30 minutes. Once cool, cover the pie and place in the refrigerator. Allow to chill for 2 hours before cutting into squares.
To make the vanilla glaze, stir the powdered sugar, milk and vanilla extract together until smooth. Drizzle over each peach square. Store the bars in a covered container in the refrigerator.
