Two Ingredient Sweet Potato Pancakes

Looking for a yummy breakfast to make this morning?  Then look no further because this pancake recipe is super easy and is sure to please!  It is gluten free and only contains two ingredients!

Two Ingredient Sweet Potato Pancakes

1/2 cup mashed sweet potato (the flesh from 1 medium-small cooked sweet potato

2 eggs

dash of cinnamon (optional)

dash of ginger (optional)

dash of allspice (optional)

In a medium sized bowl, whisk together the sweet potato and eggs until well combined and fluffy. Add seasonings any or all the optional seasonings and stir. On a medium to large flat frying pan or skillet, heat oil or butter over medium/low heat. Once pan is evenly heated, drop about 3 tablespoons of the sweet potato mixture onto the pan and cook for 3 to 5 minutes. Flip the cake and cook for an additional 3 to 5 minutes.  The pancake will be fully cooked with it is lightly golden brown on the outside.
