Two Ingredient Sweet Potato Pancakes
1/2 cup mashed sweet potato (the flesh from 1 medium-small cooked sweet potato
dash of cinnamon (optional)
dash of ginger (optional)
dash of allspice (optional)
In a medium sized bowl, whisk together the sweet potato and eggs until well combined and fluffy. Add seasonings any or all the optional seasonings and stir. On a medium to large flat frying pan or skillet, heat oil or butter over medium/low heat. Once pan is evenly heated, drop about 3 tablespoons of the sweet potato mixture onto the pan and cook for 3 to 5 minutes. Flip the cake and cook for an additional 3 to 5 minutes. The pancake will be fully cooked with it is lightly golden brown on the outside.
