Cashew Cream Bars

Raw recipes are fun, fast and easy.  This raw recipe is for cashew cream cars that are super yummy and healthy.  They are gluten free, vegan and free of refined sugars.

While cashews are called nuts they are actually seeds.  They are the bottom of the cashew apple which is the fruit of the cashew tree.  Cashew trees are native to the coastal areas of northeastern Brazil.  Cashews are a great source of antioxidants, healthy fats, copper, manganese, magnesium and phosphorus.  They have been known to help prevent gallstones, lower risk of gaining weight and build stronger bones.

The recipe below is a raw recipe, which means there is no cooking involved.  The bars need to firm up in the refrigerator for about a day.  Please consider this set up time to ensure the bars will be ready for an event you may be using them for.

Cashew Cream Bars

Bar Crust

1 cup walnuts

1 cup dates

1/2 teaspoon pure vanilla extract

Bar Cream

2 cups cashews (unsalted)

1 cup dates

1/4 cup honey (or pure maple syrup) 

1 teaspoon pure vanilla powder

1/4 cup coconut oil

1 1/2 cups water

In a food processor or blender, pulse the walnuts into powder.  Add the dates and vanilla to the powder.  Blend on medium until it well combined and becomes sticky.

Press into the bottom of a parchment paper lined 8 x 8 square pan.  Place the pan in the refrigerator to set up while making the bar cream portion.  

In a food processor or blender combine the coconut oil, honey, dates and cashews .  Blend just until combined.  Add water to the mixture and combine to blend until the mixture is smooth.  

Remove the crust from the refrigerator .  Pour the cashew mixture evenly onto the crust.  Cover and put in the refrigerator for about a day to set up.
