Avocado Soup

By far one of the easiest ways to create a wholesome meal is to prepare a stew or a soup.  Soup recipes are fun, fast and simple.  They are an easy, great way to combine healthy ingredients.   Soup is one of the oldest ways to prepare food and has been dated as far back as 20,000 years BC.

Soups have a wide range of textures, colors, flavors, and consistencies.  Some soups are thin and have a broth like consistency, while other soups have a thick puree type consistency.  Some soups involve meat, while others are strictly vegetable based.  This recipe is for an avocado soup that is more on the puree side and is vegetable based.

One of the best things about soup is how it can be easily personalized to fit your dietary needs, tastes and budget.  Ingredient add-ons, substitutions and/or complete elimination are not a problem when it comes to soup recipes.  The recipe below is a basic avocado soup recipe, however, it can be altered to fit you or your families needs.  Some add in ideas are whole, cooked shrimp, chopped tomato with basil, roasted corn or sliced cucumbers.

Avocado Soup

1 hass avocado (ripe)

1 cucumber (peeled, chopped and seeds removed)

1/4 cup yellow onion (peeled and chopped)

1/2 clove of garlic (peeled)

1/2 lemon, juiced

1 tablespoon fresh basil

1 cup plain Greek style non fat yogurt

1 teaspoon extra virgin olive oil

1/2 teaspoon salt

1/2 teaspoon pepper

Remove the skin and center pit from the avocado.  Add the avocado meat to a blender or food processor.   Add the remainder of the ingredients and puree on medium speed until all the ingredients are well combined. Pour the mixture into three bowls and chill for about an hour.  Chilled soup can be topped with chopped tomatoes and fresh basil.
